On the Table: Toasted Pumpkin Seeds
Between Sara, myself and our group of friends, carving pumpkins has become the best annual event! We all gather together with beers and comradery to gut the innards of a bright orange pumpkin. Our ultimate goal is to create a jack-o-lantern and have a good time, but that doesn’t keep us from saving the tasty seeds for consumption later!
Here is my simple recipe for toasting the pumpkin seeds. They are great as a snack on their own, or sure to add flavor to salads and trail mixes..
What you’ll need:
pumpkin (seeds)
salt
olive oil
cayenne pepper
cooking spray
:: Preheat your oven to 350°.
:: Gut your pumpkin and pull out the seeds. Separate the seeds from the stringy pulp and rinse.
:: In a bowl, mix your seeds with a couple tbsp of olive oil, a healthy pinch of salt and a few healthy shakes of cayenne pepper.
:: Coat your baking sheet with cooking spray. Spread your seeds evenly on the baking sheet and place on the top rack of your oven.
:: Let cook for about 30 minutes, tossing occasionally.
